Just the best : Ken Onion by Shun DM0500 8-Inch Chef's Knife


I have a whole set of these blades, so I'm breaking down my delineate to two parts: delineate of the Shun superior Blades, and the quantum as it pertains to this knife in particular.

I well love this knife and it's my main work horse knife. The 8" blade is excellent size for daily uses for chopping, dicing, smashing garlic, etc.. In my daily cooking, I reach for this knife first, and may pair it up with the Paring Knife for smaller tasks. I love the look and feel of this knife, I love that it's so unique and beautiful, I love that it comes with it's own bamboo stand for disply when not in use. I don't hold this knife only by the cope though, I wrap my hand nearby the cope and base of the blade to give me a very steady hand. Many chefs do this with quarterly knives and that's where I got the idea from, it allows more control and steadiness (you well feel this when you're using the larger knives). I'm right handed and do rest my left hand on the curve on top of the blade to steady and control rocking petition when dicing. I found that it's very ergonomical and seemed to be designed just for me. I have well no complaints about this knife, I wish they made more like it.

Shun knives are gorgeous creations period. Since I'm Asian, I love the tradition look and feel of this Japanese knife. I love the beauty of the blade and the dark, polished, Pakkawood handle. The unique "D"-shaped, Wood handles are preferable. The shape fits my hand perfectly, and the wood does not get slick when wet - providing a very procure hold. The steel is of utmost quality and sharpness. Do not put this blade into any old electric knife sharpener! electric knife sharpeners are made to put one angle on any blade. These blades come with a 16 degree angle and you don't want to be changing that angle. There are electric knife sharpeners that can sharpen these knives, but you'll have to do some investigate and find out which ones can be a fit with these knives. I prefer to hone with a sharpening steel and manually sharpen with a stone if indispensable (and I don't see it being indispensable to touch it to a stone any time soon). The blade is sharp straight off the factory and as Alton Brown says - it's the sharpest straight out of the factory edge as he's ever seen.

These knives are more expensive than most, but I think it's absolutely worth it. To have the sharpest, most gorgeous knife nearby - it's no contest. If you are on a budget, build your range slowly. It's been said that there are only 3 knives that are the absolute basics for any kitchen: A 8" Chef's Knife, a Paring Knife, and a Long Serrated blade for cutting bread and larger items. I would add a thin utility knife and a boning knife to that list next. Then I would add those "in-between" sizes as I get more money flow in. =)

If you plan on spending any time in the kitchen, good kitchen knives are a exact must. establishment is the bulk of cooking and when you have good knives, it cuts down on the danger of cutting yourself, it adds pleasure to the work, and it cuts down on prep time. Knives are also a very personal selection and it's best to at least go to a store and try it out for yourself first. Shun Knives are designed by the Japanese, so remember - it's designed for small hands. This makes it fit most women's hands perfectly, but I've heard of guys with larger hands not like it so much and going back to the German knives. So absolutely try it out. It's a personal thing, it needs to fit you.

Why spend so much money on a knife? Well, if you spend a lot of time in the kitchen, and you approximately all the time have to bust out a knife to prep a meal from scratch - why not use the best? Why spend that time with items that you love and brings you pleasure to use? Many times, it's the small things that brings us the most pleasure in life, and I think my Shun knives as one of those things. Having something so gorgeous and yet so sharp and excellent - it makes my time cooking just that much more enjoyable.

I have been using the Chef's choice 130 for a consolidate of months now. My knives are very sharp and it didn't take long to get the hang of using this machine effectively.

I sharpened my 8" and 6" chef's knives first. They were *very* dull and required a new edge. I notion I'd practice using the machine on these knives as they are not an costly duo to begin with (a consolidate of low-end Henckels knives) and if I ruined them, I wouldn't be too upset.

The learning curve was minimal. I took the time to read and understand the manual. It was clear and helpful and written by someone with permissible command of the English language. I began to edge the knives indicated above and with minimal attempt I was able to put a new, highly sharp edge on both knives. I was thrilled. It was the first time in Years that I verily had verily sharp knives!

I sharpened a Fiskar carving knife and a consolidate of serrated bread knives. All three turned out perfectly sharp.

As for the capability of the edge, I am not an "edge snob". To each, his own, I guess, but the edges on these knives are nearly razor sharp, and by using the non-motorized steeling slot, I am able to keep them sharp with daily use. I cook for my family. Two immature boys, my lovely wife, and various others in our circle. My knives get used for prep at least twice a day.

Don't let the cost scare you. When I total up the cost of all the other sharpeners I've wasted money on that couldn't put a decent edge on anything, I would bet I've spent the money this machine costs, and then some. It will be the Last sharpener I Ever buy, without a doubt. It's built to last a lifetime.

This machine met my expectations completely, and I am seeing send to a lifetime of sharp knives in my kitchen. I couldn't be happier, and I highly advise this sharpener to my fellow home cooks.

    I currently own the pro Chef's selection model (which I extremely recommend, by the way), but previously used this model made for home kitchens (don't let the word "professional" in Amazon's article of this model's title fool you--it's just a gimmick, there is a real pro quality Chef's selection galvanic sharpener).

    I purchased a Chef's selection after reading good things about this galvanic sharpener in "Cooks Illustrated" magazine. It without fail made a world of difference. I was beginning with good knifes--Wustof Trident and Henckels--which may have something to do with my success, but the Chef's selection easily does make home sharpening possible, and easy, in my experience. When a knife seems dulls I run it through the whole sharpening process (once every 4-6 months with a high quality knife that gets a fair whole of use), but to keep my knives enduringly razor sharp--which is what I easily love about the Chef's Choice--I just run them through the second stage a few times as soon as they're washed. That way they're all the time ready to use.

    My only negatives would be ... 1) That I've had no luck sharpening serrated knives (like a bread knife), which the Chef's selection claims is can do. Because serrated knives hold their edge a Lot longer than other knives, this isn't a major concern for me. To sharpen your serrated knives I recommend taking them to a professional--look under "knife sharpening" or "cutlery" in the yellow pages. It only needs to be done once a year or so and most will do it while you wait for colse to $3-$5 per knife. 2) My second caveat for the chef's selection is that the "third" stage on this model has little or no ensue as far as I can tell. 3) Also, the motor in this model, is a little chintzy, when compared with the far more stupendous pro model, which only has two stages by the way. For the money, it should easily last longer than three and half years--which is how long by old one ran before conking out.
